slimy ginger carrots

NT says ginger carrots are the best way to introduce lacto-fermented

vegetables. This is my 3rd time trying to make them, and every time

they end up kind of slimy. They taste fine, but that sliminess is a

bit of a turn-off.

Has anybody had success with this recipe, or is this sliminess

expected? I have never had any prblems with kraut or kimchi.
