I like around 75 percent cocoa. Valrhona is my favorite. Complex and very dark. Green and Black's is good, too. Lindt Excellence 85% is another good one. Do any of you know why Nourishing Tradition takes such an anti-chocolate stance? Also, regular chocolate candies are full of sugars, ect. which are not NT friendly.
