The Japanese also make a distilled alcohol from fermented sweet potatoes that is the equivalent of Russian Vodka - it's called Soju. " Actually, in the old days, that smell was enough to put almost everyone off it -- but now, people are saying it smells good. The sugars in the sweet potato are fermented by the yeast into alcohol. Maybe you got a different batch of sweet potatoes? They all have different sugar levels depending on storage, soil conditions, etc., as far as I know.
