Fermented Sweet Potatoes

I made fermented sweet potatoes last week and this time they have a distinctive

alcoholic odor so I assume something went wrong and I better not eat them.

Anyone know what would cause this?

Oh, yeah, babe. Sake party at Phils. Ferment a little koji rice, mix 'em

together, bottle 'em! Ohhhh..makes me crave sashimi...

Fermented Sweet Potatoes

Guess I'm real slow today but is that for real? I still don't understand why it

has alcohol;made it the same I thought as prior batches.

Yes. Cross my heart. It is for real. The Japanese also make a distilled

alcohol from fermented sweet potatoes that is the equivalent of Russian

Vodka - it's called Soju. Here's another version: " Of all shochu,

imo-jochu [sweet-potato shochu] has the strongest smell -- and I personally

can't stand it, " said Tominaga with a laugh. " Actually, in the old days,

that smell was enough to put almost everyone off it -- but now, people are

saying it smells good. "

think fermented sweet potato, made into flour, is also used in some types of

soy sauce.

The sugars in the sweet potato are fermented by the yeast into alcohol.

Maybe you got a different batch of sweet potatoes? They all have different

sugar levels depending on storage, soil conditions, etc., as far as I know.
