Hi ,

I'm sure most of you have heard of Ted's Montana Grill?

I met the half owner McKerrow, Jr. and he was nice enough to tell me

where they get their Buffalo slaughtered.

I called and did some research and this is what I discovered: Buffalo are

finished off for months on GRAIN. Another thing, if you have had their chili in

the past, they put both beef and buffalo in it - they now proclaim only to put

buffalo in, but who really knows, right. I ate there for 2 years thinking that

the Buffalo was FREE RANGE and GRASS FEED – this is what I was told. Well, they

totally misrepresent their product – ask one of the employees and they will

still tell you that it is Grass Feed. A half lie is just as worse as a total

lie. I applaud Ted for bringing back the Buffalo – shame on him for NOT doing

the right thing. Buffalo should be finished off on GRASS and GRASS only!

The point I am trying to make here is this, unless you personally know your

farmer and the slaughter house you will NEVER know what you're eating, period!

Lesson one: Know you're farmer!

Lesson two: see lesson one!

I'm afraid that's too much to hope for. Raising cattle on grass is only

somewhat more expensive in man-hours, care for and attention to the animals,

but the big difference in profit for farmers is in the extra weight the

cattle gain when eating grains. Even the beef that is advertised as

" grass-fed " is usually " finished " in the last month or two on grains (while

the customer is charged grass-fed prices). Which is why I buy buffalo meat

totally grass-fed.

There was a wonderful documentary on PBS recently called " Holy Cow. " I only

caught a small portion of it, but was happy to see the focus they had on

grass-fed vs grain-fed.

,

I appreciate your concern and thank you for writing. I buy my bison from

Northstar (I don't eat out at all) and have been assured from someone who

has personally done the detective work that these animals are given no grain

or any kind of commercial feed, ever. I buy only the heart, the liver and

the fat and all of it is delicious.
