Guest guest Posted May 10, 2005 Report Share Posted May 10, 2005 I've gone around and around trying to get my mom to try a gluten free diet, as I'm absolutely convinced she is severely intolerant of gluten. She's been on Atkins for the last year and a half, and has lost most of the weight she wants to lose. However she can't tolerate any single meal having moderately high carbs as it sends her blood sugar into a tailspin. Although I eat gluten free on Atkins with no problem, she has been dependent on using " low carb " bread and tortillas throughout, and they are LOADED with gluten. She is ready to try gluten free, but wants to do it by eating some things that she has not been eating on Atkins, such as potatos and oatmeal, because otherwise she feels her diet will be so limited she won't stick with it. But she doesn't want to undo the good she's done on Atkins for her blood sugar. She used to practically fall asleep after every meal, and she doesn't want to go back to that. So... I don't know how to advise her, but if someone knew of a book or eating plan that combines the concepts of eating to minimize blood sugar spikes with gluten free, I'd be very grateful to hear about it! She really needs something fairly structured. Thank you!
