So far I'm only a few weeks in but I'm amazed at the differences.

You may all remember me as someone who couldn't eat sodium. Well, now

that I've gotten all processed sodium out of my diet I can eat sea

salt as much as I desire. I'm sure it helps the sea salt has half the

sodium, but I'm still thrilled. I love salt and I haven't eaten much

of it in years. I was eating a 3:1 Potassium:Sodium ratio before, now

I'm more towards 2:1. I've read that the Sodium ATPase pump

equillibrilizes at the perfect ratio - does anyone have an idea of

what ratio that is?

My immune system is no longer a wimp. I used to get anything and

everything and be sick for days. All of work is sick and I get the

mildest of symptoms, if any at all. Even feeling " under the weather "

is infinately better than my state of wellbeing before.

I've been supporting myself with bone broths and veggie soups. I just

make a pot of potassium soup and a recipe similar to the winter root

soup (but less fuss). I usually leave my bone broths out for days -

off nights and on days when we're home. Is that okay to do with

veggie broths/soups? How hot can I heat a veggie soup before it loses

nutrients? Can I dehydrate it and still maintain its easy absorbtion

and nutritional potency?

I am no longer struggling to keep my weight above a certain number.

I'm just right where I should be, more stable than ever. This is

probably due to the coconut oil, which brings me to another question:

I went through almost all of a 16oz jar of coconut oil in a little

over two weeks, if that. There's less than an inch left at the

bottom. I cook for two but I know I'm eating most of it... Is that

okay? Am I using too much?

Coconut oil is so good I've been eating a plain tsp occasionally,

maybe with a little sea salt. <G> Same thing with the Kerrygold

butter I get - I've stopped bothering to drown bread in it, I just eat

it plain. I used to eat a lot of butter as a kid, but I was wondering

how much butter can one safely eat in a day?

I'm up to 1 tsp/day of the cod liver oil, I'm finally getting used to

gagging down the stuff. I think I dislike the cinnamon flavor more

than the oil, oddly enough. I'm definately trying mint next time.

When I visited Africa I saw a glown in african faces that I had not

seen in America. I was surprised that a starving nation could look so

vibrant. I am starting to see that vibance in my own face now. I've

done nothing else but change to NT for my diet.
