Guest guest Posted January 12, 2005 Report Share Posted January 12, 2005 Anyone ever frozen them? In what form? Do they do the same thing as potatoes when frozen - i.e. get kind of mealy and yucky. (I try never to freeze soup with potatoes in it haha.) The ones I still have left are kinda old, and I need to do something with them, but frankly I'm trying to back off on the starches right now, and I don't want to waste them. Tried making " fries " out of a couple of them but they didn't turn out so great, very soggy. I know I wasn't paying enough attention to the oil temp at the time, so that may have been part of it, but not sure how much was the age, too. Any preservation ideas greatly appreciated (other than drying, that's my last resort method). MFJ Once, poets were magicians.
