I have one. It makes " flour " of a sort, but not fine enough for most

" cake " recipes. The Vitamix does about as well. However, I don't

use flour all that much at this point, so I'm not a good judge. The flours

I do use are corn starch, tapioca, and potato starch which I just don't

know how to make (and aren't nutritionally worth it, in any case).

I think if I was to grind stuff myself I'd work on the nut flours,

in which case the Vitamix is probably easier (it's easy to clean,

and quick).

Ah, good to know. I'd like a better way to grind nuts to flour (not nut

butter, lol). My processor is okay, but not ideal. And, I need a new

blender anyway. Thanks for reminding me of Vitamix, which all serious

cooks I know swear by.

I have one and I like it very much. I use it mostly to crack porridge

grains but I've made bread flour with it. The trick is to run it

through several times, starting with cracking and then gradually

grinding it finer with subsequent passes. Usually four or five times

through and I've got quite fine flour.

Yeah, good ol' Vitamix! After years and years of other blenders

and mixers, I wish I'd just bit the bullet and got a Kitchenaid

and Vitamix to start with!

Also the Kitchenaid grinder says not to use it on " oily "

stuff like nuts, so you'd be using the Vitamix for those.

Plus the Vitamix grinds coffee, bread crumbs, rice ...

I do too. I use frozen nuts and seeds to keep the oils from surfacing.

But I eat hunter gatherer style, so nuts are the only source for flour I

use for the most part. And sometimes I need more than 1/2 a cup. :-)
