Guest guest
I bought a wedge of the Estrella Family Creamery's Apple Tree Tomme cheese at the Whole Foods store in Bellevue today, and I'm happy to report that it's one of the best cheeses I've ever tasted. I've never really understood the terminology that people use to describe cheeses, so I'll just say that if you live in, or ever happen to visit, the Puget Sound area, you should--nay, must!--do everything in your power to get some. It's not cheap ($20/pound), but it's definitely worth trying at least once. Here's a newspaper article with more information: http://seattlepi.nwsource.com/food/210241_estrella02.html Note that I am in no way suggesting that their other cheeses are inferior; I haven't tried them. And while I'm on the topic of really good cheese, I have similar--and long overdue--praise for the Cato Corner Farm in Connecticut. They sell their cheeses at a number of locations throughout New England. http://www.catocornerfarm.com/shop.php

I should second your recommendation of Cato Corner's cheese. They're at the Union Square farmers market I go to, and their cheese is excellent. I have to confess I usually prefer milder and less... intense... cheeses, though. -
