Marinate in kefir spiked with bratwurst seasoning, or whatever else strikes your fancy, for a day or two - I've marinated as long as four days in that. Dry and enjoy. But I wasn't sure pork could be used as a meat for jerky. My questioning is around the importance of cooking pork so it is not pink, especially around the bones.
