Some background - I am a huge fan and follower of Nourishing Traditions. My sister has Ulcerative Colitis, and she is starting the Specific Carbohydrate Diet which I am sure many of you have heard of. Well a large staple of that diet is dry-curd cottage cheese, due to it's low lactose level I believe. The problem is that most/all cottage cheese you can find is made with low fat or non fat milk, which we all know is a bad idea (can't absorb those wonderful fat-soluble vitamins if there's no fat now can we). I am here to ask/beg for everyone's help in locating a source of dry- curd cottage cheese that is made from whole milk. I live in Vancouver BC Canada.
