Dennis,

I dunno. You didn't give us much info to go on. 'Splain your

situation and method to us. Do you gots milk kefir grains or

water kefir grains. (Not to be confused with milk grains in water

or water grains in milk)

They go through cycles, or it might depend on the milk.

Mine didn't grow much at all in non-organic milk, but they

grow like mad in full-fat organic milk. I've not been able

to get raw milk til recently ... when I get that I'll compare.

Sometimes they have to " get used to " raw milk though,

and sometimes the bacteria in the raw milk compete

with the flora in the kefir grains.

As for leaving them too long ... they will probably grow faster

if they get fresh milk daily, because they use up the sugar.

Also if you leave them a VERY long time, it can kill the grains.

If I want something to ferment a long time I take out the grains

and then leave the partly-fermented stuff to continue fermenting.

The grains can be stored in the fridge in fresh milk.
