Thanks very much, Gail I don't know, but if you live in a city, there is most likely a tortilleria somewhere, if not, a Latino grocery store. Visit and ask what to use. One of our community gardeners brings his organic corn to be processed into fresh masa at the tortilleria, which he then freezes. He's picky, so whatever they use can't be that bad.
