Northstar Bison (FYI)

I contacted Northstar Bison the other day (www.northstarbison.com). They are

located in northwestern Wisconsin but ship around the country for a flat fee of

$12.95. I've ordered their bison before (but only their ground bison) and it's

very good. I'm going to order a bunch of organ meats so I e-mailed them with

some questions. See below.

Hope this helps anyone who's looking for good bison. I will try to remember to

report back in a month or two after I've had some of the bison organs!

[Tom] Hi et al.,

I've ordered from you before and loved the bison but I have a few questions for

you: Are you planning on being certified organic any time soon?

[Northstar Bison] We are not planning to go organic only because in the bison

industry, being

100% grassfed, without any use of anitbiotics, hormones or vaccinations we

would only have to increase the price to say we are and not enhance the

product more than what it is.

[Tom] The organic label is insignificant to me as long as I know where my meat

is

coming from and that little to no chemicals (anitbiotics, hormones,

pollution) are in their food or environment, their diet is proper (grass),

and they are treated right. I'd also like to know more details about how

you raise your bison. Are they exclusively grass fed/hay fed?

[NS Bison]YES!

[Tom] If not, what else do you feed them and what percent of their diet does it

comprise? What kind of supplements do you give them, if any?

[NS Bison]A mineral supplement formulated specifically for us and the soil

condition

here.

[Tom] In the winter are they in a barn at night or do they stay out all the

time,

as I suppose bison are adapted to do?

[NS Bison] No shelter, just the big blue & gray sky!

[Tom] When do you usually slaughter and process bison, at certain times of year

or

continually?

[NS Bison]We slaughter year 'round on Thursdays.

[Tom] More specifically, I'm interested in ordering some bison organ meats. Can

you sell me whole bison hearts, livers, kidneys, thymus glands, and tongues?

[NS Bison]Yes, we have all those organs plus testicles, pancreas, and spleen. I

do

have some on hand right now......heart, kidneys, thymus, thyroid, and

tongues. They are whole unless requested to be cut up.

[Tom] I'd rather they be whole and frozen, but if you only sell them cut up,

that's OK. I'm also interested in bison brains, do you have any in the

freezer or will you at any point?

[NS Bison] No brains allowed out of the plant due to the BSE issue and that

bison are a

bovine animal. Altho, it appears highly unlikely that they would be a

candidate for anything like BSE due to the free range raising of them.

I'm a huge fan of their liver. I order it regularly.
