Kidney fat is generally considered the most desirable, but depending on the

age of the animal, back fat might be good too, or even fat from other

areas. Heidi might have more detailed info on this than I do, though most

people can't find use for nearly all the fat from an animal.

My favorite is the buttery-smooth fat that comes on fattier steaks,

but I don't know where that can be found in quantity on the animal.

Given a choice I would first ask if I could get an assortment. Then

the next time you can tell more clearly what you like the best.

I am just now reading " Cancer: Disease of Civilization? " by

Vilhjalmur Stefansson, and recently read " Fat of the Land " by the

same author. In his experience with native Eskimos he concluded that

they ate as much fat as they felt like, and were (before European

influence) very healthy in all respects, and almost never got

cancer. Except during times of famine, they served seal oil or whale

oil with every meal, and everyone added as much as their appetite

dictated.

I agree with you regarding how great that fat tastes on the certain

cuts. And I'll most likely go with the kidney fat like

mentioned and a little assortment as you mentioned.

And I know it depends a ton on body size and activity, but if you

had to put a number to it would it be a 1/2 pound a day of beef fat

is good? Or is that probably a little much of one type of fat with

todays life style?

I mostly agree with Mike, except I would bump that number up to 80%

on the high end and not go below 20-30% on the low end. I would also

still encourage everyone to trust their own instincts. I think a

short amount of time with too much fat won't hurt (our bodies may be

crying out for it after a long time on a low-fat diet), and I suspect

you will start to feel when it is too much after a while. Sugar &

starches are the ones I need to watch out for. As long as my carb

level is low, I can eat a lot of fat.

I agree that 80% probably would be a good high end, but I don't think Mike

was suggesting that FAT consumption could be 0% on the low end, just that

BEEF fat consumption could account for 0% of the calories in a healthy

diet. There are other sources of good fat.

Sorry, my mistake. I was thinking of total fat calories. I agree

that there are many good fat sources, beef fat is just one of them.

[MAP] Yup, that's exactly what I meant, thanks. But I'm a little

skeptical of the 80% idea you guys suggest. I know 20% is the

standard protein figure and everything, but I went down to 70% to be

conservative (okay, I confess--my internet connection is being funding

by the low-fat dictocrats <grin>) for a few reasons. One is that even

Eskimos eat some carbs. The other is specific to the case of just one

fat type, like beef fat., as opposed to total fat intake. I don't have

any developed ideas here, but my intuition is simply that the 80%

figure would imply too much restriction on dietary variety in

practice. It also accomodates some vagueness in the semantics of

" beef fat " , like whether the fat from eating beef liver is counted. So

that's pretty much what I had in mind there with 70%.
