I have no idea, but either way, it's beyond question that the yolks suffer

tremendous nutritional degradation from cooking, so it's probably a good

idea to keep scrambled eggs (and omelettes and so on) to a minimum even if

cholesterol oxidation isn't an issue.

there are a lot of things we may never know! But moderation is

probably key in most areas.

My honest opinion is that it's possible to worry too much about some

things. ;-)

I like my scrambled eggs and omelettes too much to entirely give 'em

up, although I also eat eggs lots of other ways, too. I doubt a

scramble every week or so is going to shorten anyone's life by too

much.

Besides, if Sally and Martha () like scrambled eggs, that's

good enough for me. :-D

You could always eat sloppy scrambled eggs! This was the norm in our

house - scrambled but left very soft.

Hi AnnMarie. Once you " get the feel " for how much of each food group you need

to eat daily to obtain your ratios, you don't have to calculate them exactly

every day.

You can check every month at first, and after awhile check them once every 6

months. When you get the feel for it most people find they are " right on " when

they check them. I have.

You don't need to be exact or perfect, some variations are okay.
