Fried Mush

patties or something like pancakes. Instead, the mush didn't firm up or hold

together at all. Mush, it remained. Do I need to add another egg? Was my

oatmeal too liquidy to start with? Has anyone made these before? I'd really

like to be able to make a nice snack out of leftover hot cereal. Thanks so

much.

For this to work the mush has to be really firm, in my experience.

Classically with something like polenta it should be so firm as to be

sliceable. Then you don't need an egg, though dredging it in egg (like

french toast) is yummy.

I usually save leftover porridge, add some flour and a little sugar and

salt, mix in some whey or kefir, and let it sit overnight. Then I add

an egg and some baking soda and viola! pancakes!
