Guest guest Posted January 10, 2007 Report Share Posted January 10, 2007 Madam hummus is indeed crushed chick peas.. but then in that you add a little bit of Tahini paste always... you get tahini paste in all middle eastern store, if not, just soak some " til " in water and blend them in your food processor Now a days, all grocery stores in the US stock hummus and I am sure they do too in the UK. I always buy the fresh one in the deli section, and not the canned one... So, I use store bought hummus and jazz it up as follows: I buy plain hummus from the store.. to that I add the following: I buy roasted red peppers (capsicum) which are in the pickle aisle in your grocery store... easy to find... ok, so now I add to a blender the roasted red pepper, 2-3 cloves of garlic hummus, and lemon juice and blend the same. The red pepper gives the hummus a nice red colour.. Now its ready to serve To serve my hummus, I assemble a platter as follows: I buy freshly baked baguette or french bread and slice it into thin slices, they are nice for dipping in the hummus I buy 2-3 different types of crackers and serve them on the platter too along with the hummus and bread-crackers, I serve a bowl of black olives and also some nice red cherry tomatoes. I cheat always and get the ready red pepper/lemon/lowfat hummus-the Tesco here has 3-4 different varieties of the same.The good thing about UK being so multicultural is that even the mainstream stores stock desi stuff-I get my dudhi and bhindi there too. And dont call me madam-makes me feel ancient and that too when I haver just had my keep young fix!!
