Jen,

I've made the fermented sweet potatoes and taro many times. Just salt

to taste, IMO. Or salt to baby's taste, in your case. All that salt

makes it a " safer " ferment, so if it's unsalted just make sure it

smells/tastes all right when you put it up.

No personal advice for you, but wanted to let you know if you havent

checked it out already... the website of Dr Cowan (fourfold path to

healing) has an excellent article on feeding children, from birth

beyond. Great age by age - what they should be eating & when. I

found it very useful, but then I love the book! (I would love to try

the fermented sweet potato, sounds so yummy- but no whey allowed in

my house)

I've made that recipe about 3 times. It gives me gas for some reason but

UNfermented sweet potato doesn't. I haven't been able to figure out why.
