I used spelt flour (1.5 cups) and teff flour (1 cup) for the recipe from NT. I also used buttermilk. While it smelled pretty bad while it was fermenting (my buttermilk was old - though there didn't seem to be anything wrong with it), the waffles came out delicate, chocolate- tasting and not sour at all.
