My mom often boiled them, removed the skins (not necessary but what she did), mashed them with butter, and froze them. They thawed out very nicely - she'd just warm 'em up! Guess that means that they don't get so nasty as potatoes after freezing (my gut said no, but it's always nice to have confirmation!) BTW, I read that the actual trick to freezing potatoes is NEVER LET THEM DEFROST before heating/reheating. In recent experimentations, that seems to be true. Which is why I still won't freeze soup/stew with the potatoes already in it if I can avoid it - but baked/stuffed ones are excellent if they go straight from the freezer into the oven. Then again, I put so much other stuff in my B/S potatoes, you can hardly tell there's potato in there anyway. That might have a lot to do with it too. Thanks! I'm off to boil me some sweet taters. I used to buy 10 of them at a time, wash and cut off both ends, bake them until they were soft, remove the skins and then freeze them. They thawed and warmed up almost as good as fresh.
