Guest guest
Hi Ron, I also miss mayo and have experimented making it. I used the virgin coconut oil from WFN and also the supreme oil. Definitely, they are the best,IMO. But, I didn't think the mayo was that great because of the strong taste either. I have also been using VCO for a total body moisturier and for cuts. It's wonderful. I am celiac. and my celiac has gone to a new level. I did all the food allergy testing and found out that I am allergic to a lot of the wonderful NT foods that I have been enjoying for the pass 4-5 years. One of the foods is all forms of coconut! My next experiment with mayo will be using the light tasteless olive oil. I say go ahead and try to make your mayo with an expeller coconut oil but use a good one, like from WFN or TT. I would love to hear how it turns out. I am going to try your recipe with the light OO.
