Better production for the U.S. & Canada's more northern latitudes, shorter growing season than more southern latitudes where it originated and the higher the gluten content, longer it keeps in storage. Canada's wheat likely has higher gluten than ours because their growing season is shorter and storage time longer. Russia imports a lot. Not sure if they use high gluten, hybridized seed.
