Guest guest Posted January 10, 2005 Report Share Posted January 10, 2005 I just ordered some liver, and since our recent discussion of organ meat yields had gotten me curious, I asked how much a bison's liver weighs. The answer: about ten pounds. I didn't get to inquire how old the bison are when slaughtered, so it could be that an older bison has a somewhat larger liver, but certainly this gives us a good ballpark sense of how much liver a cow or bison has. Since I ordered 20# of liver, that means I'm accounting for the livers of two whole animals, and at, say, 8oz/day 5d/wk (I'm consuming a therapeutic dose, obviously) it'll last me a couple months. Hmm, funny how that works out -- basically one liver per month. Maybe someday I'll be able to cut back.
