Raw honey works very nicely as a sweetener if you don't mind the sugar. You can get away with using smaller amounts if you substitute glycerine, but I don't know that glycerine is exactly healthy. Unfortunately, ice cream seems to require _some_ kind of sugar-like substance for the texture to work. I usually use Organic Pastures raw cream with a $50 Cuisinart 1 1/2 pint ice cream maker. It comes out great!
