I think the question I meant to ask is, will it keep for several weeks

without growing " bad cultures " ?

Ann,

Well, I'm the kind of fool who would try, but you can throw in some

apple cider vinegar or some more kimchi juice, if you have some lying

around, to increase acidity. I think it will be fine. And if it's

not fine, it will still be funny.
