Get the casings from any butcher you know. But you can always hand-roll. If I get some time later on today, I'll post a couple of recipes (from Frugal Gourmet haha) that take well to hand-rolling - all you have to do is adjust to add more fat. MFJ Our gods are dead. Here are a couple sources I've used. http://northamericanhogcasing.emerchantpro.com/ http://www.butcher-packer.com/ Another company I've bought other stuff from and been very happy with is now selling casings too. http://www.alliedkenco.com/ That said, I wish I knew of a source for organic casings.
