Do you have a list or anything that you can email me with a list of gluten free substitutes for every day foods? She has specifically asked me about soy sauce and apple cider vinegar? Celiac.com is a great resource and they have a list of gluten-containing foods. AFAIK, apple cider vinegar is GF and she should buy some naturally fermented wheat-free tamari--it tastes just like soy sauce (which is NOT GF). It's a harsh transition (albeit, for me, at least, a fruitful one! There are special stores for stuff like bread and pasta ... Tinkyada is the best pasta, and the only decent bread I've found is the one I make. I like Bragg's aminos for soy sauce, or Thai fish sauce. There are " no wheat " tamaris but the companies say they " might be " contaminated. Plus, one of the people I cook for gets MSG pain from soy sauce (any brand) which is not a gluten issue, I guess soy sauce has natural MSG-type molecules of some type. Apple cider vinegar is all ok, AFAIK, except some that are marked " cider flavored vinegar " ... they even have an apple on the front, but they are made from white vinegar. White distilled vinegar is considered ok nowadays too, but I avoid it anyway on principle (distilled vinegar? WHY???? also I heard some of it is made from *wood* which makes no sense to me at all).
