There's not much detail on the sausage >recipes, but the pics are great. OK, I have to make one comment ... the steer I've seen slaughtered NEVER suffered so much. One second they were looking for a handout, the next they were unconscious. Tho I appreciate the honesty of the site, and I think it's great people learn these things, there are two issues: 1. as a soft-hearted liberal human being, I prefer animals not to suffer or fear. 2. the less animals suffer or fear, the better they taste! People often complain of a " gamey " taste to grass fed animals, and that is often due to high adrenalin content in the meat. I don't want to go into too much detail for the sake of the squeamish (are there any squemish on this list left?) but their choice of slaughter methods isn't the best. As a city girl, I've never seen a slaughter before, so I had no idea that it could be done in a more humane way than pictured on the site (these were the first pics of a slaughter I've ever seen and I looked at them VERY briefly as I am of the same stripe as you!) I was actually more interested in the sausage making pics (no killing and I make sausage now). I'm not squeamish and it would be educational for me to know what slaughter methods IYO are the most humane. Isn't there a book by a Temple ??? about this?
