Yeah, I've been " suffering " with red wine for awhile now ... it is sooo nice to have porter! Unfortunately I can't actually say how it compares to " real " porter, it's been too long. But I do like my new version just fine. Gluten whacks me out too, and my loved ones take the brunt of the damage, so I'm not willing to experiment. I CAN say that my cider tastes better than Trader Joe's cider ... I bought some of theirs and no one finished the bottle, but mine disappears quickly. Using molasses for *beer* didn't occur to me until I read " Washington's Small Beer " recipe on the net ... if it's good enough for , it's good enough for me! His household drank 200 GALLONS of the stuff a month???? Can you believe it? Their " small beer " was pretty equivalent to kefir beer, from the sounds of it. Boy, I do wish they had digital cameras back then. As for the " tip of the iceberg " ... donations, in the form of recipes or ideas, are gratefully accepted ...
