Kris, i just learned about this... there is this guy, dr. david brownstein, who has written a book called 'Iodine'. 90% of his patients are iodine deficient, but i digress. iodine (good) used to be used as a dough conditioner a long time ago...then they switched to bromine (bad), hence the term 'bromelated', or the lack thereof: 'unbromelated'. laura in nj Quote Link to comment Share on other sites More sharing options...

It's use is limited to recipes where the flour can't be soaked.
