I have, but I haven't found a slow cooker that has a low enough setting for

stock.

I've got a 6.5 qt Rival slow cooker. It has three settings, high, low,

and warm and I make soup broth in this all the time. Works

swimmingly....it's the first slow cooker that even approaches the

capacity that I need....LOL! I tried using the " simmer " burner

(significantly smaller flame than the other burners) on my stove to make

broth, but even on very low, it wasn't low enough.

One of the chapterleaders just posted that she uses a Rival 6.5 quart

crockpot with excellent results--she's a chef, too.

I don't leave mine on the stove overnight, I transfer it to a cooler

to insulate it overnight(make sure it has a trivet underneath and it

won't touch any plastic, and that the lid of the stockpot is on) . I

continue to simmer when I wake up and it has worked great for beef stock.

I'm kind of Texan when it comes to cooking, though -- more and bigger are

better. I can't see making stock in a 6.5-quart crock when I can use my

16-quart Le Creuset pot, and if I could fit a 32-quart or 64-quart pot on

my stove, I'm sure that's what I'd be using. But I like to make large

batches of things because I'm lazy.

I use a crock pot all the time,<will check the kind - I got this one

at the thrift shop, but had one just like it as a wedding gift 30

years ago> but I've also used my old fashioned gas stove. I just

move the castiron circle from the spot over the woodburning part on

the the burner and put the flame to lowest. The castiron difuses the

heat so I don't get a " hotspot " and keeps it covered in a way that

prevents the cat's tail from getting anywhere close to it while I

sleep. Of course I don't KNOW that the cats get on the stove and they

would never do that while I'm up, but...

hey all,

thanks for the great ideas! i'm going to give the Rival a try! i do

hate to give up cooking in the large creuset that i have, but i just

don't sleep well when i leave it on all night long. i'll report back!
