How do you fool your oven?

My new oven and the one before it only went down to 170 degrees. To get it

down lower, I turn it on to the lowest (170) setting and then turn it off. I

experiemnted with an oven thermometer until I learned how it felt to my hand-for

instance to let dough rise. Now all I do is check it periodically with a swish

of my hand inside the oven. I imagine that's how my grandmother checked the

temp on her wood stove.
