Lamb Lungs

We have goat lungs now and again, I just fry them in lard with some

onions and salt. Normally, we have the heart and liver at the same time

so it all goes into one pan for lunch right after slaughter.

I have a set of lamb lungs.

Has anyone prepared such before, so any recipes for this?

Assuming it is ok to eat those - I am not sure (they are not organic).

I'v never eaten lungs before :o)

Any ideas?
