Surprisingly, the smell produced during the roasting of beans is not the nice smell of the final product. A lot of chemistry happens during roasting...the green beans are much smaller than you expect...they expand to around twice their size and have " cracking " stages they go through and a skin that they shed. They also give off CO2 and probably other gasses as well (after roasting you usually want to let them " out gas " CO2 for a few hours else the coffee can be too acid). Anyway, the bottom line is that they pretty much smell like you are burning something when you roast them, and the smell sticks around a while. I kind of like it but my DW does not, so roasting is done outside at our home.
