Tapioca shouldn't contain gluten, but " tapioca pudding " might. If you

look on ingredient lists, sometimes they will list things like " malt "

(usually barley malt, which acts like wheat), and " modified food starch " (which

can come from wheat, tho usually it is from corn) and " natural flavors "

(which can contain wheat).

It also helps to keep in mind that in big factories, the same machine is

used to package a number of different foods, and typically there

is a bit of contamination. Flour flies through the air too, so if it

is in the same building it can get on other food.

Thanks Heidi I knew you would know. It's the Cozy Shack brand I'll have to

check the other ingredients.

Tapioca pudding is so easy to make from scratch--I'm gluten free and

make it occasionally as a treat. Of course, Minute brand could have

contamination in the packaging plant as Heidi said above.

I use the recipe for quick tapioca on the box, but use sucanant and

half n half instead of sugar and milk. It's quite delicious. I'll

bet coconut milk would be a good substitute for the milk too.
