I notice that mushrooms get little attention in NT. And I'm talking about the

more medicinal kind such as mataki,etc. I did read in the Maker's Diet that they

are difficult to digest. But it seems like there could be some way to ferment

them to soften them.I'm not what a fermented mushroom would grow though. Maybe

that's a problem. I thought they are agood source of antioxidants and find it

curious they get little mention in the book. Guess the populations Price studied

did not consume them.

I remember Sally Fallon saying on a tape that mushrooms must be cooked.

Does anyone know why and for how long and is the juice from it ok; if

not should they be cooked seperately and the juice thrown out?

there is a recipe in NT on p. 188 for Mushroom Salad. the mushrooms are not

cooked so uncooked mushrooms must be ok. you could always email Sally at
