I make the " white " kimchi by not adding any vegs outside the napa cabbage and not adding the pepper. It's still has some zip (from the cabbage). I need it to be real easy because I have very little extra time and my health is also not so hot. Heidi's recipe is especially good because the instructions are very detailed and she even included pictures. It's also pretty foolproof. Welcome to the list! There's a PDF in the files section which illustrates how to make kimchi, a fermented cabbage food that can be superior to sauerkraut. I strongly recommend checking it out. I've looked at many of the files here trying to understand the importance of CLO, etc, in my diet, but I didn't even know what Kimchi was so I skipped it. Thank you for pointing it out. So nice of Heidi to put that together for those of us raised on Kraft mac 'n cheese, and canned corn. Also glad to here that you are just making the " white " kimchi cause that is what I'll start out with. I have to go really slow and simple. AND....you say it's pretty foolproof? Well, good cause if anyone can screw up a recipe, I can. lol Thanks again, ' Oh, ps.........is there a special reason folks use that napa cabbage? Guest guest Posted December 28, 2004 Report Share Posted December 28, 2004 Hi , I think Heidi said you could use just about any veggies, but I'm not sure about omitting the napa cabbage. I wouldn't omit it just because I love the taste of it. If I recall correctly Heidi has said that napa cabbage is " born to ferment " , so it's good to include it to ensure fermentation success. But my memory is not so great, so don't quote me on that. If you're just getting started, you might want to try the crispy pecans and almonds. They're easy to make and yummy and very easy on the digestion. I practically lived off of them when I first started this diet. They're still a staple around my house. I bought a dehydrator which makes it really easy. The dehydrator has been a great investment. I use it to make jerky and other goodies.
