Hi all,

I have a friend from work who's just harvested a whole bunch of

horseradish (enough to fill a child's 4 ft wading pool)and is wanting

to know if it's really good for you. Anyone know any facts about the

stuff - maybe some hidden cure for something? Oh, and I'd like to

know if it would lacto-ferment in a little whey and salt. She's just

using vinegar and salt.

TIA

Rhonda

Unfortunately, horseradish, being a member of the family cruciferae, can

depress thyroid function. I don't see why it shouldn't work in a ferment,

though. Maybe Heidi, who seems to have tried fermenting everything that's

ever existed or ever will, could tell you for sure, though.
