I've heard of frying in ghee, does it not turn brown as easy as plain butter? Clarified butter & ghee are similar and the words are somethimes used interchangably, both have had the milk solids removed from them and are essentially just fat. In the making of ghee, the solids are usually (but not always) allowed to brown before removal. You can fry at a higher temperature in ghee OR clarified butter without a problem, the smoking point is around 375F. The smoking point of butter is around 300F BUT the milk solids start to burn too at a lower temp. Quote Link to comment Share on other sites More sharing options...

Personally, I don't care for the taste of food fried in ghee, much prefer lard or tallow for frying. Belinda is clarified butter the same as ghee?
