The Fast and Forgetful Path to Chicken Nirvana

Defrost an organic farm chicken on Saturday. Shove it to the back of

the fridge and forget it's there for a while.

Monday morning, remember it's still sitting back there and toss it in some

brine with the intention of roasting it for dinner that night.

When Monday night rolls around, forget it's sitting in the downstairs

fridge and eat something else for dinner instead.

When Tuesday night rolls around, remember it's there and you really oughtta

cook it. When you finish putting your excessive amounts of farm food

away, say, oh, 9:00 PM or so, remember that you should have put the chicken

in the oven already. Whip out a bunch of coconut oil and mix it with a

little bit of Urban Accents " Yucatan Grill " spice mix (contains paprika,

black pepper, garlic, allspice, coriander, vanilla and parsley). Toss

it in the oven (don't forget to put it in a pan first) at 450 for half an

hour, then turn it down to 350 till it's done. Ignore the wondrous

aromas wafting about the place and resist the urge to turn the heat back up

to 450 to make it cook faster.

Eat chicken, cherries and raw cheddar for dinner.

Swoon.

Ideas are funny that way ... you go and let one loose, and suddenly it's

crashing about the place, bashing up against other peoples' heads.

Somebody oughtta control that. Pesky things, ideas.
