Glutenous : Wheat, rye, barley, kamut, spelt

Often contaminated with gluten: Oats

Non-glutenous: Corn, rice, buckwheat, millet, amaranth, quinoa

Other gluten free flours, non grain: Arrowroot, potato, tapioca

www.celiac.com has extensive info on that. But basically, wheat/barley/rye (WBR)

are the axis of evil. Spelt and tritacale are types of wheat. Oats are ok except

that

they usually have traces of wheat in them.

Everything else is not " glutenous " ... amaranth, rice, corn, quinoa etc.

However, the term " glutenous " is a total misnomer: " gluten " means the

protein in a grain, any grain. By convention, it's being used only for

the WBR grains when talking about gluten intolerance.

So when you see " corn gluten " on a label, it's ok.
