Hmmmm...it *might* work, but heart is a muscle and the texture won't

be as velvety as all liver. I haven't really eaten heart, so others

will have to comment. I say try it and let us know as it would be a

great way to sneak some heart into the ole bod. [insert flabbergasted

comment from Mr. about the gastronomic glories of raw heart

meat here...]

I'm STILL trying to ease my way into eating organs. It's a slooooooow process.

rescued and have dubbed Diablo Dude, cuz the other 6 kitties think he's

the Devil!

I'd cull the hearts--if anybody asked me--they're really chewy and

resiliant and I think it'd be lousy mousse.

Well, I may end up working up in them thar parts eventually, and if that

happens, I'd be perfectly happy to make a nice big mess in YOUR kitchen

instead of mine. ;)

I'll have to go dig out that bag of livers. I'm not quite sure where I

buried it in the freezer.
