Inulin can be made from wheat ...

I just thought this was humorous since and I

have gone on and on about inulin ... ok, well today

it was posted on the celiac board that inulin can

be made from *wheat*. So, now, of course, I agree ...

everyone, don't eat inulin!

Inulin can be made from sugar, and sugar can be made from

complex carbs, and doors are made of complex carbs, so I guess

that means inulin can be made from organically grown doors.

Whats the brix of a door? Are the enzymes in the door destroyed

during cooking?

And this is a problem...why? Because there might be trace amounts of gluten

present due to imperfections in the processing? Or just because anything

made from wheat is tainted by association?

Inulin is found in pretty much every single sort of vegetable material. It is

one of the three main types of polysaccharides plants use to store energy,

sugars and starches being the other two. Wheat at 4% inulin has one of the lower

percentages of inulin of food crops.

Amazingly enough, the folks who REALLY react to wheat do so to homeopathic

amounts of the stuff. Mostly though, I was being humorous ...

Not if you are talking about a refined product, but it is normally found in the

same plant tissues.
