This happened to me too, last week ! The peanuts were purchased from a reliable

source, and we used the NT recipe for crispy nuts, but they taste very bland and

unappetizing. Our previous attempts with almonds, cashews, walnuts, pecans and

Brazil nuts have all turned out great. We did a 8 hour saline soak, followed by

low-temp drying for 24 hours. What did we do wrong?

Roasting Peanuts

I recently made my first batch of roasted peanuts as described in NT. We

weren't really pleased with the results. I did roast them at low temp for about

24 hours. They did not have the toasty roasted flavor one is used to with store

bought. Do others have this result? I'm wondering if there is something wrong

with the technique I'm using or maybe it's the peanuts?

I have a question about soaking nuts in general. The past few times I've done

it, the salt has not penetrated into the nuts. How have you managed to get your

nuts salty? What if I dissolved the salt FIRST in very hot (almost boiling)

water, and then poured the heated salty water over the nuts? Or would this

inactivate substances that I want to keep intact?

I always double or triple the amount of salt called for in the soaking

water - especially for peanuts, else they do turn out rather boring.

I usually do them in the dehydrator, so there's no hope there of getting

that nice roasty taste - only ones I ever did in the oven were cashews,

they came out nice, but again, I had WAY more salt in the soaking water

than is called for in the recipe.

Maybe you're not using ENOUGH salt? I don't know about increasing the temp of

the water, and it's effect on the nuts. I usually use room temp purified water,

and dump in about 1-2 tbsp. of salt.

I haven't tried this myself yet, and I'm sure I will because dh LOVES

roasted peanuts. He used to buy them raw in the shell and roast them

himself. I believe you could probably do something similar with your

soaked and dehydrated peanuts. It only takes a few minutes in the

oven on 350, and you have to watch them and keep tasting them, because

it's a fine line between roasted and burnt. HTH

btw, where do you all buy raw peanuts? I buy all my nuts in bulk from

the hfs, but I've never seen peanuts.

My almonds & cashews had NO taste after doing this. The only ones I like so far

are walnuts.

Perhaps since mine are soaking overnight that's too long to soak as it's

probably for closer to 10-12 hours.I'll see what that does.
