perfect, i read it all and remembered most of it.... i guess 29 year olds of

all ages can have senior moments at times... ;-)

hey - just wondering about the " lasts for 2 monts in the freezer " statements.

have you or anyone else on this list?) by chance kept it frozen longer than 2

months?

2 months seems so darn short and i have all these chicken feet and necks to use

and was planning on probably around 3-4 gallons of stock to freeze, but there's

NO WAY i could consume it all in 2 months. at my rate, we're talking about a

year or so.

what exactly goes bad in the stock after 2 months? anyone knows?

Oh, it will " keep " for years. Most things in the freezer can get

strange odors, or change texture, or something, depending

on how you pack them. Broth is iffy because mine usually

has onions, and if it isn't packed well, the onion smell

will get out and make the berries smell like onions! If you

freeze it in a glass jar (leave lots of room for expansion)

that shouldn't be a problem.

The main problem in freezers is that things dry out

and change texture. If you prevent that from happening

there doesn't seem to be a limit on how long things

keep. Fruit for instance: if you mash it into a paste

so there is no air in it, then put it in good freezer

containers, will keep. Loose berries will not keep

as well.

But bacteria don't grow in a cold freezer, so that's

not an issue. However, if you have a " frost free "

freezer, food doesn't last long at all because the

freezer slightly thaws every so often.
