Im getting ready to butcher chickens and the thought just occured to me...they make turkey bacon, why not chicken bacon? How do you make bacon out of poultry? If you wanted to do it yourself, and still have it resemble real food, you'd probably do some combination of smoking and salting. They also keep the moisture content high, so it cooks into something crispy and not just tough.
