Any Cheesemakers Out There?

I've just ordered some raw goats milk cheese from a small, family creamery

and when I asked about the amount of salt in the cheeses, the best answer I

could get was: about 1-1/2 to 2 C per 50 gallons of milk. Does anyone have

a clue as to what this would mean in a pound of cheese? Or how I might

research that question?
