The American Cheese Society and Oldways Preservation &

Exchange Trust have joined to assemble an international coalition that is

fighting to preserve the rights of individuals to choose cheese made from

unpasteurized milks. The coalition is named " Cheese of Choice Coalition " (or

CCC).

Oldways and the American Cheese Society organized the CCC to

oppose governmental agencies that want to ban production and sale of cheese made

from unpasteurized milks. If such a ban were implemented, the following cheese

would be affected: Parmigiano-Reggiano; Swiss Emmental; Swiss Gruyere; Swiss

Appenzell; Vigneron; Comte; Shelburne Farms Vermont Cheddar; Grafton Village

Vermont Cheddar; Keen's and Montgomery's English Farmhouse cheddars; Spanish

Idiazabal and Manchego; and many others.

To draw attention to cheese most likely to be banned from

import production and sale, CCC organized an " awareness event " in 18 stores

across the country on May 19-21, 2000. The three-day event produced tremendous

results with over 3,400 consumers signing on to support the CCC and numerous

articles in newspapers coast-to-coast.
